    225 until 120* then reverse sear is what I do. Anywhere from 30 mins to an hour on the smoker seems to be my average.

    Yeah. I also never time them (because I forget). I think 45 mins is prolly average. They aren’t a long smoke as they’re usually in the 1-2 pound range. The one I did on Saturday was probably in for right around 45 mins

    I'm still working on perfecting my tritip cooks. I think I got away with pulling at 120 this past time because I didn't have my sear station hot enough as I'm still learning and working the kinks of using a charcoal grill again. I was pulling before around 105 I think and then searing and that was way too under done. I love a good rare-medium rare steak, but it was pushing the rare side for me. I might try and do another 110 pull, or maybe 115. The last one I did was definitely the best one I've made and it ended up being about 135 after pulling from the sear.
