    I more or less follow this recipe for my Instant Pot, but cook the shrimp separate and add cheese to the grits when done. I sprinkle Old Bay on the shrimp before cooking and add Cajun seasoning to the grits before cooking.

    As I've been reading about smoking with mesquite, all the blogs, forums, and comments scare you away from using it. They say it's quite strong and bitter yet that's what is suppose to be the top notch wood for beef. Last night the wife went out with her girlfriends for dinner which left me on my own. I stopped and bought a New York with a bone to give it a try. I have a Camp Chef Woodwind with a new sear box and wanted to try that also. I loaded up using the Traeger mesquite pellets, smoked at 225 until 115, fired up the sear box to 800, threw the steak on it for 45 sec one way, turned it 90 degrees for another 45 sec, and flipped it over and did the same on the other side. It was a nice med-rare at 135. Topped it off with a pat of butter and let it rest under foil for 10 minutes. Wow. It was good and the mesquite hit to spot. I know Traeger mesquite isn't 100% mesquite but it a blend. Any idea on what the other wood percentage is?

    Don’t quote me, but I believe the base is usually alder since it’s a mild flavored wood.

    I believe you are correct. Many say it’s alder in the west and oak in the east. Like what percent. I’m reading something as only 30% flavor wood and 70% filler wood (although all hardwood like the package says).
