    Oh no doubt. Failure is all part of the process and I don’t care how good of a chef/cook you say you are. I had a brisket I did in a new smoker a couple weeks back. Guess it was to close to the heat source and by the time I realized it the bottom was already charred. I ended up letting it finish off, rested it then sawed off the bottom. Top was saved but after paying $60 for a brisket (was up at the cabin and didn’t have time to get one before leaving) I was a none too happy camper.

    I got some burgers on the smoker right now. Turned the heat up and searing them off. Made some French fries also. Wanted bacon and cheese to go on them but Mrs didn’t cook the bacon. :(

    I like Monterey Jack, has that cheese taste but not Limberger strong lol. Hopefully it's a bit! My burgers got no condiments, which is really rare from my family, and all but 2 were eaten.

    I like Swiss a lot of times but tonight was just plain ole American cheese night. All but 1 patty was eaten. I almost always smoke mine now then I sear them.
