    I'm getting frustrated around here there are pellets everywhere, but they replaced the bags of fruit wood chunks with them. Now it is pellets, ACE, Fleet Farm, Runnings, the pellets have taken over. And wood chips, WTH?

    I have had the Anova mentoned earlier for a couple of years. Not a fan of sous vide myself. Tried it, experimented and just didn't see where it was a gain in any way. But that is just me some people love it. But not me.

    Looks good I have a skirt thawing in the fridge. And cut some basil tonight to make basil pesto to put on it.

    Sometimes just feel like a steak.

    I remember this from awhile back.. just couldn't remember the fuel you intended to use. I think I mentioned the entire back of my smoker is a pellet box that holds 60# of pellets... So freaking nice!

    Anyways.. be looking forward to the pics!

    The fuel load/concept is pretty similar to what I use in my drums. It'll be a stack of charcoal with some wood chunks mixed in that slowly burns and feeds itself. In the bottom, where the embers fall, you can add additional wood for a greater effect.

    Eventual goal is to get a concession trailer that I can load it on. The small footprint and set-it-and-forget-it nature of a temp controlled cabinet smoker is essential for what I'm hoping to eventually do.

    Next will be a modest stick burner for the backyard ;).

    I want to pick one up buts it’s either going to have to be a cheap one or used one. I don’t think I can do the full cook. I want it for the reheating of my smoked foods. :)

    Im gonna need to build a new one at some point sooner than later. Big enough to hold pellets that are the exact size of the wood I'll be feeding it.

    So this is almost done, turned out decent its a little off, because i cut the pieces before i had my table saw fence square. But should work good. I posted here since some dont follow the other thread

    Made a top for the dishwasher the same as my Maple kitchen floors. Tongue ‘n groove. Worked out well.
