    Damn it. I keep forgetting to put my spam on. Even smoked some chicken thighs today.

    Finally getting the hang of this pitboss 3 series. Moved my thermpro to the same rack ive been putting food on and came to see a huge difference on the temp. No wonder the roast got overcooked. I only ran it at 2/3 temp and was maintaining 225-230. Wood chips also kept smoking for hours unlike before.

    I actually tried the Lite Spam this time, the boss and I sampled a piece as it came off and both liked it better than the original. Way less fat, sodium and calories.

    Beachwood BBQ for dinner! They’re a brewery with delicious bbq. I always get the pulled pork sammich and, blue cheese grits. Might get just a pulled pork plate tonight with the grits and collard greens

    On another note, just got my six month oncology report from Thursday’s visit. As I stand this minute I’m 100% cancer free!! This falls about two weeks before my 57th birthday. I was diagnosed on my 56th, best present ever!!!
