    Long time :spy: first post here and couldnt resist all the food pics. So...got a jumbo joe and smoked some pork belly for the first time!!

    Need some advice please... how do you guys control the temp steady at 250 on this jumbo joe weber. Cooked for ab 6 hrs at 225 to 250 but the the temp never stayed steady. Had to keep opening and closing vents.


    And took some advice from you guys and smoked some spam!! Made some spam musubi!!

    I would assume on the Weber would be the same as all the others. Leave the top vent open all the way and adjust temp with your lower vent opening. Temps will vary some. Adjust and leave it for about 20 min to settle and see where you’re at. Then adjust again if needed. But we only adjust our air intake not the exhaust.

    When I first started with my WSM, I micro-managed the air intakes to try and maintain 225-235. Since then I have relaxed some and just let it run and try and keep it 225-275 as it does roam around a bit and it just seems like you're chasing your tail.

    Ya i was going back and forth every 15m adjusting the temp. But crazy as it sounds, i enjoyed it or maybe it was all the beer consumed in 5hrs lol

    Question - is the pan of water needed for smoking and what is the purpose?

    Very nice work there, as said above some up and down no matter the pit is going to happen. As long as it doesn't get out of hand you should be fine.

    It can act as a thermal break, also keeps some moisture in the air. I don't use one and many here no longer do but there are also others who still use it. As for chasing you can also purchase a gadget that will adjust for you. I'm pretty sure @Cold Iron has such a thing on his.

    What the hell can I and am I suppose to do with round steak and rib steak... this is not a joke

    I get a lot of round steak and rib steak sent to me from the butcher who cuts up our friends cows it never comes out good so I need to know what I need to do to make it good or what I can do with it? can I make jerky with it I got one chunk marinating right now all day long while I’m at work that I plan on trying to low and slow tonight once I get home for dinner.

    you could use it for jerky also...I use ground meat and mix seasonings. but thats my personal favorite. I dont like chewing on jerky, I like to eat it.
