    Getting there.

    Trent is doing a pork shoulder or two. Brandon is cooking up a bunch of chicken drums.

    I'm on brisket and pork belly duty.

    We'll cook some beans out there at the event and have a generic side like slaw or potato salad.

    I'm off on Friday, so I'll take that opportunity to get all of my extra prep work done. Brisket probably goes on around 7 p.m. or so. The timing for this thing is always kind of weird. Try to get briskets off before I travel to Roanoke and just give them an extended rest. Need to get to Roanoke by 6 a.m. or so to get the pork belly on and do that whole cook on site.

    Once I get a big smoker and a concession trailer (with A/C), I'll just go out there the day before, start the whole cook on site, then stay the night in the trailer ;).

    Never had them? Figuring we're a little late to the party for this weekend, but I'll give them a try.

    Frankly, I'm not much of a bean guy, but I've been told I make some killer ones regardless. I think we're entering the bean category this year just to see how well our near-zero-effort beans do. If anywhere near the middle of the pack, we'll look at developing a real recipe.
