Food Smokers and Smoking Tips/Tricks/Techniques

Lots of potential customers tomorrow. Last thing I need is to cook something with another rub that I don't have available. I'm already perturbed that the Unicorn isn't in, yet.

 

But my version isn't a rub.. just the whole garlic cloves and salt and pepper! And I'm just picking on you!

Thanks a bunch! It'll be a fun event - it always is. We don't serve a lot of people, in the grand scheme of things, but it is a lot of fun talking with folks that come out to support us.

It serves as a bit of a tune-up, too, for competition later this month.

 

Chicken thighs and broccoli on the pellet smoker.

 

Either that’s some huge briskets or some tiny shoulders.

 

I can't look at that picture the same way anymore.

I notch my briskets to mark the direction of the grain. Those are the little bits taken off the corners. The shoulder is on the bottom rack with the third brisket.

 

12 hours of me basically sitting inside while the smoke does it's thing and not a drop of rain.

Time to temp a couple slabs and pull some others, I go outside, and it's raining.

Murphy's Law is a kick in the crotch.

 

I agree. Like yesterday, i pull my shoulders from the smoker because it’s starting to rain and the forecast is shit for hours. Hour later, it rained for maybe 10 minutes and the skies clear.

Ugh. Pouring down rain here. Not great for an outdoor event at a motorcycle shop.

 

This sucks!!

 

Can't control the weather, but I can control the brisket and pork. They looked suh-weet when I pulled them.

 

I'll take some rain down here! Been dry this year!
