    I can't speak for your local meadery, but I don't think there's a difference between the bottling and kegging, in terms of maturation time. Not to say that you couldn't drink mead within a month of brewing, it just wouldn't taste nearly as good as letting it mature. It's a simple question of how long the yeast has to work on the sugars, as well as for sediment to drop out. Aging also allows harsher flavors to mellow and even out.

    How fucking said it is that I haven't had ANY of the Trillium that I got last weekend, but my pops had one yesterday while over my house watching a big soccer game, and another friend of mine that I've met through my son's daycare who was also over yesterday had two???!!! I couldn't drink because I was too nervous watching the game, and to top it all off we got smacked in the mouth hard, so I was pissed and bummed after that, without motivation to eat, drink, or do anything.

    Sad... real sad. My "stash" is dwindling down and I haven't even had any of it.
