    The FIL is trying to smoke pork belly for the first time today and told me to bring sides.

    I run on smoke for 20 mins, crank the heat up all the way cook 6-10 on one side, flip and cook till they reach medium rare.

    I feel like I used to just do mine at 225 until med-rare but I can’t remember. I’m gonna do some bacon wrapped asparagus so thinking a 225 for maybe 30 mins might be good

    I like the sear I get out of the high heat for the finish and the pure smoke for 20 mins gives me all kinds of flavor. If 225 gives you good results then that’s all that matters. This is no right or wrong in this game we play lol.

    Well except fat cap up or down. There is a right and wrong way there. :crapstorm::rofl:

    Thanks for the tips and help. :cool:

    If I get a smoker for my house I’ll definitely go with a digital temp controller. Having to wake up and check things was inconvenient, mainly because I needed sleep instead of waking up every couple hours.

    No after pics, but before.. since it otherwise didn’t happen. :cheers:
