    a friend of mine uses applewood i think is what he said he used. turns out great everytime!

    Anyone ever heard of pellets made of orange (tree) wood?

    Regardless I have an upright pellet smoker. Of all the smokers I've had over the years, it's my most used...........I even make smoked baking potatoes. At any given moment I have 5-6 bags of different pellets. Awesome.

    Now I need to start reading another huge TW thread. Thanks!

    Don't get me wrong, I'm not saying my way is better. It's just the way I have done it since the 80's, before the internet and smoke tubes and...

    Daughter has been bugging me for her own smoker, so we got cracking on a keg I had laying around.

    She helped make the cut lines for the opening in the top! Otherwise it was watching dad go to work with the grinder and cut discs. Probably a good thing that I brush up on my grinding work before this week, right @Bigdaddy4760 ?!?! :rofl:

    That’s awesome man. My daughter has been asking me about web design and coding and computers a lot lately. I think we are going to buy her parts for a computer for Christmas and her and I will build it. She’s 8 will be 9 this December. When we are working on a flip house she wants to come help and when I’m cooking she asks to help. Makes me a proud daddy.

    I missed a step: when you pull from smoking, let it sit on cooling racks til near ambient before wrap and frig. Does it matter? Damifino.

    That's great. Good for her. Those are definitely the parenting victories that are so damn rewarding.

    When you weld as 'well' as I do, you have to be good at grinding. :rofl:

    Beef and pork. Cheap cuts done dirt cheap. Brined in simple salt/sugar/balsamic, pellicle staged, smoked with alder pellets.
