    It actually worked quite well -- though I did score them pretty well before spinning.

    Though I was going more for the Maillard browning of spinning over hot coals more so than just smoke.

    I just use Tony Chachere’s “extra spice” Creole seasoning. And again, lately I’ve been doing the lite Spam, the Boss and I both like it even better.

    I like all of this ideas. I did mine this way because I can keep them outside and the magnets help me remember what I used last. All are good ideas

    225f until 120f IT. Then sear as hot as you can. If you sear on the GMG, you gonna need GrillGrates. ;)

    :thumbsup: Searing on a Weber otta work! A cast iron grill pan screamin hot on a stove works well too. Turn the exhaust fan on first. ;)

    Venison/bacon blend. Very Pepper heavy. Mixed a lot into the patty and also put on both sides as cooking... so damn good! half pound burgers and a great sear in the pan. Pepper crust was awesome!

    Sometimes I like the crust you get from a griddle type surface. Next time just do it in cast iron and no one will mess with ya. :)

    Plus it’s venison. :)
