Nah just regular meat is fine but all the grocery stores around me prices for meat are really high and the meat usually isn’t great

Thinking about dry aging some new york sirloin for mine and my daughters birthday. Been doing a bit of research and learning some good techniques. What do you guys think? Any tips?

Agreed. In our part of OC there's below average meat in grocery stores or crazy expensive butchers. Costco is the way to go. Best is the Costco Business center in Westminster. Great selection with good prices for whole cuts. Cook what you need and vacuum seal and freeze the rest.

My recommendation is dont bother. Ive had Vegas' "best dry aged" steak before. Very in the ordinary. I would just buy some good ol HEB Natural rib eyes, make em medium rare and wow everybody. Then again Ive only found place that makes steak better than me.

HEre in Texas the best meat you'll find is at HEB. They dont offer some of the more exotic cuts, like picanha, but then again I dont care much for picanha. The only reason Ill go to costco/sams is for the big ol briskets and ribs. If I ever feel like making one of those giant tomahawks I will go to a local butcher that actually serves em.

When I was stationed in the great nation of Texas, HEB would have been a go to but I'm in Bavaria Germany so no go on HEB. I've had some good dry age beef out here, wanted to do something special and learn something new.

Never been to that one. It’s a bit of a drive for me but I may check it out. I got the bad ribs today from FV one. Just returned them to Bella tera and got new ones. Stopping for a needed beer at Beachwood now
Ya our grocers suck for meat here idk why. I always forget I have a Walmart grocer right by me that has decent meat I think. I’ve only been once but always forget it’s almost right behind my house.

The 2 near me sell fresh tortillas daily. I still prefer the local one, but they're way better than the other brands out there.

I think like most things it’s how it’s done. We age our prime rib every NYE for usually 2-3 weeks and it comes out phenomenal. I’ve also had the flip side where I was like why bother.
