    "Getting out of hand" - Wife
    Surf’n’turf Saturday on the genesis. I gave my smoke box thing to my dad once I started cooking more with charcoal. Don’t think he’s using it so I may take it back lol. Help supplement the flavor since this gasser is just so easy sometimes.

    Won't get a smoke ring without chemically cheating and adding pink salt to meat in an electric. Electric heating doesn't produce the necessary chemicals required for chemical interaction of the meats myoglobin . Nitric Oxide and Carbon Monoxide are needed.     Not that a ring is required, it is for looks only. We've just become accustomed to it going hand in hand with BBQ though.

    Brisket started going up way before the popularity of the pellet. As for easy bake I will say till the day I leave this earth it’s not about the vessel it’s cooked in its about the quality of the things used and the person doing the smoking. I’ve seen and tasted food off all sorts of pits and it’s a mixed bag some of this is from supposed bbq restaurants.

    I’ve used all sorts of pits myself before settling on my pellet pooper. First things off my pellet were good but not my standard of good, took me a few cooks to figure out how things worked and adjust my methods and thinking to it.

    I like that I don’t have to sit there and worry about feeding it wood throughout the cook I let the little auger inside take care of that. :)

    It generates plenty of smoke so that i dont think that would help.

    Ah that makes more sense then. Wont worry about it, just means ill have to get a charcoal smoker sometime for supplement

    Seconded. I had great results when I was using an electric smoker with an A-MAZE-N tray. Also, consider checking out the mailbox mod if you’re using an MES.

    Could always toss a few briquettes in the bottom to try and assist for the first couple hours. My propane smoker was the same way. Cooked fine just didn't get that pretty ring.

    Yes the ring is unnecessary and does nothing but sure is nice to see.

    Dried some wood slices in my electric smoker so i didnt stink up the house. My wife is making ornaments, fridge magnets etc...couple examples in the second pic. ;)
