    The neighbor gave me some apple wood that he had milled into 5/4" boards about ten years ago. He figured that they've been sitting that long and he hasn't used them so he gave them to me. Wings are on the kettle now, we'll see how the apple tastes!

    Ribs were excellent! No pics but I went with almost twice the PF I usually use and I was not disappointed. For the first time we finished a whole rack. Wife was jazzed on them!

    7# pork shoulder bone-in on the docket tomorrow. Also went with lots of PF for overnight rest.

    I cooked my last rack like I would have pork ribs. Almost five hours done with the bend test confirmation. Burned a lot of the greasy beef fat off. Came out pretty good.

    Applewood smoked wings were excellent! Not nearly as robust of flavor compared to oak or even cherry in my opinion but there is nothing wrong with that. Did Pitfaced original on some and unicorn on the others. Both were great.

    I grill lobster tails and prefer them that way. And grill King Crab legs. Have an All Clad steamer pot, actually 2 of them in different sizes, for lobster and crab. But once have had them "dry" hard to go back to steaming them.

    The tails will curl on you so I run a skewer through them to keep them flat. And of course don't over cook them! That ribeye looks awesome :thumbsup:

    You're scaring me, you are getting your upgrades in the order I suggested :rofl:

    That grate will help and with the GG it adds enough weight that the kettle will feel a lot more solid. Looks like you got the cooking grate that works with the Slow N Sear, planning ahead I see :p

    I'll second that! Hard to find around here especially this time of year though. Last weekend looked at Costco and they have 10 lb. box frozen for $258. And Lobster tails for $218. Didn't want to spend almost $500 so I didn't. But came damn close anyhow LOL.

    Chicken thighs are my favorite, hate doing them on the gas grill as you have to watch for the fire from the grease. But we love thighs in our house as well and the Weber just cooks them better.

    How do you know when the sea creatures are done? I’ve never grilled them before but may give it a try. Lobster should be easy to tell, but the crab legs?

    That’s a good question, because it is probably easy to over cook them I would think.

    mats, flaps, and stickers. Extang solid fold 2.0. Mobtown sliders and full skids. AVS vents
    I panned it with butter and put it on the smoker for a bit. Then the wife grilled it to finish. She said it was fantastic.

    I was tired of my broken stock grate! Knew I wanted the hinged grate for it too. I don’t know if I’ll get a slow n sear, If I do it won’t be for a while. I will probably start out trying the snake method and the minion with it before getting a slow n sear. I almost wish I had just gotten the Webber specific GG but the straight panels work too, just gotta be a bit more creative.

    Lox bagels are my favorite. They’re always so good. I’m sure a smoker toasted bagel made that even better though. I want to go get a bagel but I’m trynna get my day started and hoping to head down to the beach for a surf

    I just got outta bed :laugh: needed to catch up on some sleep. Have a bit of a headache though that I’ve had since yesterday and the damn thing won’t go away. Hoping some more food and water and coffee will help escort it away. How’s the arm doin? Stitches still in there?
