    I didn’t quite get the bark I was hoping for but at 204 the brisket was probing tender. It’s now resting in a cooler. 4.5 hours almost on the dot. Obviously I can’t tell anything until I slice it, but the look and feel of this brisket indicates it will be pretty good. That On Point smells amazing!

    Brisket advice: point is at 203 and probe is perfect. Flat 190 to 195 depending on location , probe not like butter yet... still a bit of resistance.
    Do I let it ride until flat is probe tender, or cut off point now and prep for burnt ends and leave flat on the smoker? 15674393782799072503702460544320.jpg

    Point can take some over temp. If you made it this long, I wouldn't separate. Just watch the flat. My 2 pennies anyway

    Diced up some leftover ribs and made a unicorn rib omelet with fresh grated Tillamook. :thumbsup:

    Do you guys use any kind of formula for how much to cook per person?

    I’ll have 17 people here Sunday, 6 kids and 11 adults. I wanted to smoke a Boston Butt for pulled pork but not sure how many lbs. to buy and don’t want to undershoot it. Any advice?
