    4 am and the brisket is finally done...

    Green line - pit temp... Off from the pit

    Ran at 225 til the first bump to 250 then a final bump to 265.

    Didn't probe til about 9 hours when it was in the stall, then another almost 8 hours wrapped in bother paper and probed for the above graph.

    It's in a cooler resting now. Work in a few hours. Nap time :cheers:

    What model do you have?

    So far no breakages or anything serious.......but all the warnings in the manual? I ignored them. It's a smoker, meh it's supposed to be dirty. haahahahahhaha:annoyed::crapstorm:

    Yes. Cooked over a jungle campfire on a spit. Very tough and leathery and we did not have any seasoning available to us at the time. I am sure it could be done much better than what I had then.

    Damn. Hands down top 2... Possibly best one I've done. Pepper flavor bomb. Juiciest flat. Phenomenal smoke flavor profile . Guess good things happen from ignoring it and not taking pics :rofl:

    Pulled this off when it hit 190F. I couldn’t pull it very well, it was still pretty tough in places. I read online that you should check if the bone moves freely in the meat. I’ll do that next time.
