Same here.....with wet comes degradation, and if you manage to get a fire going.......the powdered pellets dry and then combustion in the feed auger.........just a GD mess. Note my sealed buckets. I love all kinds of smoking and I won't eschew pellet smoking, just a man needs to know the limitations. My smoker will hold a crazy amount of pellets, maybe 100 pounds+. Pointless to load that much in unless 24 hr+ smoking session.

Turned pretty good. A little dry but I took it all the way to 165f.

Not sure how to cut it so the bacon stays on.

So today I made 25lbs of thin fajita for my cousins bday along with sausage, chori queso, cacti salad (aunt made it), chicken breast (heb seasoning on one side, spicy pitface on the other), and now that everyone left Im making the pastrami that I pickled last Sunday. 720012FA-8611-4E62-9A0B-284887D90B49.jpgA8BCB3F7-9A65-49FD-B068-E61E661A08F3.jpg

I feel like I'm always posting the same picture. Oh well.

Sunday night wings: Salt and pepper for my wife, buffalo for me. Also unicorn thighs for lunch tomorrow.

More often than not we have roasted broccoli and mac n' cheese along with them. Yum.

It's been wet and humid here too. I've had my pellet grill over 2 years and never had a problem with swelling pellets. It sits on a covered porch, but when it rains and blows, it gets wet. I've never emptied the pellets. If it matters, I use Lumberjack. :notsure:

I guess i'm lucky to live in a dry state. I leave pellets in the hopper all the time. I just put the cover on when I'm done cooking.

nope 4 Runner. We can go 50 miles or less in any direction and get desert, mountains, muddy rivers or beaches. Snow and mud in the winter. Plenty to do.

Usually we don't want too much mud in these places.

All I use are Lumberjack with the exception of the 40# bag of Black Cherry from Amazon Prime special. I think it's just a combination of time and circumstances. You can test a couple pellets with a drop of water or two. Mainly if you use the smoker a lot you won't have a problem if you keep the firebox clean. If you let it sit a month or three the leading pellets might blossom. I will also add I just got my cover in August and I am really digging how dry the unit stays.

I'll be honest. I don't use my Grill Grates all that much. I'm not the maestro with them that @Cold Iron is. That said, we were making burgers last night and I found a great use for them (I'm sure I saw the aforementioned @Cold Iron doing this at some point). Flipped over and used to cook the bacon.

A little fussy in that they didn't stay hot enough off the coals to cook at a reasonable speed and over the coals risked burning, so I did some shuffling back and forth, but that's part of the fun of grilling. ;)

The bacon was hickory smoked, but I cooked with a little cherry wood in the Weber. On Point on the burgers, of course :D.
