    Pork loin or tenderloin, or double smoked ham. Ribs could be done in 4 at 250 or higher.

    These were done 2-2-.5 at 225-250 yesterday. Definitely fall off the bone.

    smoked a pork loin last night. Simple with rub and garlic cloves jammed in it. Came out perfect.

    So I'm finally found a nice commercial holding cabinet to make a proper smoker out of. It's kind of a beast, but It only ended up costing me $40.

    All stainless, insulated, and has a gasket sealed door. The heating unit is 120V ~1600W. The unit is set for a max of 200F, but after reading the manual you can adjust it +/- 50 degrees which is perfect.

    I am still going back and forth on what smoke generator to use. I really like the Bradley ones, but I don't want to have to deal with buying pucks. I'm also not sure how well the closed canister/air pump setups work. Any suggestions?

    This isn't the exact one, but the same model.
