    Haven’t posted in a minute, have did a few smokes, just trying to concentrate on transportation of foods to other locations for football gatherings. Cheesy game tonight, no one’s doing anything (thank goodness). So I’m doing a load of flappers for me and the boss.

    Yeah buddy! That's one of my favorites. I've got a whole brisket in the freezer that I want to pickle and make pastrami out of. It's something like 20 lbs. :D

    I figured. I have two as well that I think I'm going to use as a trial run. Don't want to ruin 20lbs of good brisket! I usually soak the store bought corned beef for a few hours to get some of the salt out.

    Yup I started the soak at 10am, and I’ll pull it out just before it goes on the smoker. I changed the water half way through the day as well

    Fired up the smoker and threw it on, checked 3 hours later, liked the crust, so I wrapped it in foil to finish! WE ARE MAKIN PASTRAMI DUDES! :rofl:
