Just noticed your avatar says Mi. now instead of Fl. Did you end up going back to Mi.? I leave Saturday for a week on the North Shore. Back to work a week then back up for 2 weeks at the end of the Gunflint Trail on the Canadian Border.

Need to smoke some food this week for the trip I better get my ass in gear.

Lets see bog browse fed venison or corn fed venison, hmm... Yah you betcha, kind of fond of those corn eaters myself. Although at the age I don't want to drag the son of a beaches out of the woods anymore and stay with bird hunting. Lot easier to put in your pouch and keep on walking :)

Well, after a much needed vacation and journey to pick up my auction prize, it's back home with me in the garage awaiting modification.

Now a question for those of you that have done similar conversions. I want to keep this as neat and tidy as possible. The walls of this thing are about 1" thick and insulated. I am looking for ideas on how to put vents in, but also re-seal the holes I cut so I don't smoke up the insulation or get moisture in there. I would prefer a no-weld solution, but if it comes to that I can. I've been looking at stainless flashing/pipe flanges that I can use to accomplish this but so far I'm coming up empty handed.

I want to use something like these for the side vents, and a 4" chimney with a damper in it. I would prefer to keep it 100% stainless, and yes I know that will be expensive.

I'm also looking for smoke generator recommendations. The holding cabinet heater should cover most of my temperature needs, but it would be cool if I could get a little extra BTU. I'm leaning toward buying one of the replacement bradley units and modifying it to suit my needs. I will probably put my own controller on it though.

Ya the Mrs decided she wanted to come back. Summer was brutal in FL this year. Now I’m also closer to the Laser so I can get things done faster with two of us running it. :)

Those are ok, I have a box of stainless ones in the shop. I use rivets to install them. They will
    Last a long time

The problem I have is I will need to put a sleeve through the side of the holding cabinet and have them welded in. I don't want to leave the insulation open. I would like to retain the ability to just hose the whole unit off or leave it outside if I decide I want to. The heating unit just lifts out. I'm considering just getting some SCH40 pipe and having a bunch of them welded in and using something like these: https://bbqsmokersupply.com/dampers...bly-for-4-pipe.html#product_tabs_askit_tabbed

Maybe a pellet stove type wall thimble for the hole?
    https://www.lowes.com/pd/DuraVent-Black-and-Silver-Wall-Thimble-for-3-in-Pellet-Vent/3134705

We punched a hole in one of the houses we had and those two pieces kind of thread together. You could find a vent that fits in the hole nicely probably.

Looks like a fun project

Used one like that for my pellet stove install and it had provisions for outside air feed for my Harmon stove. None made of stainless that I know of. I also need to be concerned with collapsing the thin walls trying to squeeze against them. I have a local welder willing to help out. This is one of the times I wished I had my own tig though. Maybe I'll splurge in an El-cheapo 110v unit. It would have no problem welding this stuff.

    Wings tonight...

About 2.5 lbs into a gallon ziploc bag with 2tbsp of olive oil and a good shake (probably about another 2tbsp, but not sure) of Unicorn. Mix everything up good and well in the bag, then onto the smoker at 450 for 30 minutes.

Classic Frank's sauce, 1/3 cup butter with 1/2 cup Frank's classic. Toss wings in sauce (except for a few for my daughter...she's a lightweight) then back on the smoker for about 5 minutes. Back into the sauce for serving.

    Best wings I've ever had.

I've used the classic Buffalo Wings recipe as described by @Cold Iron many times before, but the Unicorn brings it to 'a whole nother level'. I think the kids still use that phrase.

Anyhow, much props again to @bvbull200 for helping me make a good thing even better!

Welding in a sleeve would be easy and a clean install

Had an ember drop into the fan for my Flame Boss. Assuming anyway since the impeller had a chunk that was melted. Found a replacement fan on Amazon and put a piece of steel mesh on the mount and I am back in business.

Hunsaker showed up today! I got it sprayed down and running for seasoning. This thing reacts super fast to any damper adjustments.
