    They’re little handles so he can pick it up. Kinda like the little things you stick into the ends of corn on the cob.

    Going to a friends party this evening he is doing brisket. Gave him my methods after he asked me how I do mine. His Mrs was like I hope you filled him in so his turns out near as good as yours.

    He had never done brisket. :)

    Got some boneless country style pork ribs. Not to thick. What do u think my approximate time will be at 225°

    They will cook up pretty quickly due to all the surface area, I’d start temping at 45 minutes or so. I think I have better luck with these on a hot grill vs my smoker. YMMV

    13 hours. Phenomenal color. Wrapped it up this am. Been in cooler since. Couple hours til slicing time.

    Flat wasn't dry... But wasn't super moist. 50/50. Barq was peppery and great. Real happy with that.

    Chopped half the flat with point for some future tacos and wraps.

    Overall I'm pleased. Now for some football!

    It's got some Mods
    Beef ribs with unicorn dust. I struggled keeping the temps down on my kettle for some reason today and as a result, they came out a tad dry. Still quite good though. That unicorn rub really came through!
