    Not a taco or smoking/grilling so I guess this is the spot. Cooler weather here in Oregon and rain have switched me over to soup/chili/pot roast type cravings. Wife's nursing a cold and wanted anything but soup tonight (made tortilla soup for her last night and she had pho for lunch today) so decided on chicken mole' enchiladas tonight. Stopped by the local butcher shop and picked up thighs. I *always* have dried peppers for making chili/chile colorado etc. but when I got home I found that I was out! Rolled my own mole' sauce with some of my homemade <essentially> chipotle powder, regular chili powder, onion & garlic granules, cumin, oregano, chicken base and black pepper. The chicken base has plenty enough salt for the sauce.

    Got some water going and added the rest, added some cocoa nibs & a bit of cocoa powder and let it simmer down to a decent consistency. In the oven now :cheers:

    I cut back on sweets, carbs and .... my worst habit (late night snacks :hungry: & eating).

    Wife made some turkey vegetable soup in the instapot. Surprisingly the turkey was very tender! Soup was great!

    It finally dawned on me why I have had indigestion for a couple days after eating this.... dry onion soup mix! :annoyed:
    Another favorite dish I can no longer eat. :(

    Love the versatility of the grill/flat top. At times it’s a bit cumbersome.
