    Thank you for that reassurance.

I too will take a rib eye over a NY any day. I will say that a super high heat and quick char on either side will make for a really nice medium rare NY.

Understood this is a very late response, (just received a “like” on a previous post) and reread yours. I agree for the most part on the cook vs method, but I still feel poopers can make a new to smoking Joe Blow produce great product sooner? That make any sense? Then those same guys/gals can start experimenting and share their experiences with the rest of us. Just my thoughts...

I can agree that they most likely will get better faster on a pooper. I went the opposite way started with stick and charcoal burners then stumbled upon the pooper when I was looking for a new smoker at my new house. Did a butt ton of research, picked what I thought was good unit at a good price. I’ve had my stumbles with it along they way I think it’s like doing anything EVERYTHING has its idiosyncrasies. I’m at the point where at some point I’ll get a BIG stick burner for comps and stuff and a nicer pellet pooper. Hell if I was @Bigdaddy4760 good I would build my own.

I didn't, but I'm down to make an event out of it!

Next year, I ought to have the new pit ready, so I'll be dying for excuses to cook on it.

Snyder looks to be about 4 hours West of me. Could make a quick detour north to snag @Bigdaddy4760 on the way.;)

Did a filet mignon covered in unicorn rub tonight. This was my first time trying that rub on a steak. No surprise, it was great!
