    I can't wait. It's my first holiday season with the Rec Tec and I plan on cooking everything on that this year.

    I haven't found anything that can't be made in my pellet smoker.. it's a giant out door oven.. from smoked water for ice cubes to making pies... and everything in between.

    Who all has smoked with oak? While clearing out our 4wheeler trail I cut this limb and realized it was seasoned out and not rotten so I brought it back off the mountain with me. Cut up and split to cull out any pieces with rot. Any difference in flavor of meat compared to hickory?

    @Bigdaddy4760 I thought you'd like his convertible trailer .. the fire box and cooking chamber are made from oil line pipe.. obviously the sides fold down for transport not bad for a home made job!

    Well it does have Texas plates on it so would likely be a "normal" sight for anyone above it there LOL. Wonder what the percentage of homemade smokers per capita in Texas is, of all variants. From what I have seen it must be pretty high.

    ~30 years or so ago my Ex threw my smoker away because someone called the fire department on me when I was smoking some fish :rolleyes:

    Smoking breakfast sausage patties now for my hunting trip leave in the morning for 12 days, about 2 hours at 250° then will just heat them up when at the cabin. When it is done think I'll do the spicy Italian meatballs. And hang some thick sliced bacon for half an hour or so. It is raining. It is sleeting. And it is snowing.
