    Morning gents (and gals), I missed a lot of delicious food posted in here lately lol.

    I was camping at Road Atlanta from Wed-Sun last week for the Petit Le Mans race and kept my phone out of reach most of the time.

    Wish I had taken some pics of our cooking up there. Brought the Jumbo Joe and Weber Q. Made prime strip steaks, roasted corn, smoked beans (with all the goodies in it), beer brats, etc.

    Now I feel like I am catching a cold so it's a hard hit of meds to try and get it under control before it gets worse...

    Took about 2 hours on the Weber kettle at 240-260. I don't know if I would call the bacon crispy in the sense that I am used to crispy bacon but it definitely wasn't soggy bacon either, it was firm and the little ends hanging off were closer to what I would call crispy.

    Next time I would like to try some different stuffings, it wasn't bad but I think a cheese with a little more bite like cheddar and maybe some kind of peppers would be good. And definitely add some rub or seasoning of some type to the outside of the tenderloin, it was good but plain.

    Finally fixed the Traeger on Sunday. My stansbroil replacement controller they sent was great for like 3 cooks then it died. looked like the board shorted out.haha. So I manned up and picked up the Traeger replacement with the dual probes off Amazon Warehouse deals. Back in biz

    Did a few pork chops with some On Point last night :hungry:

    Haven't fired up the Charcoal smoker in a few weeks might have to pick up another Brisket or something (alligator) this weekend.

    I feel like I just committed a crime against offset smokers, but with life and chasing two preschoolers, I needed something to do the dance for me. Going to keep the old offset for a while, we’ll see it’s fate.
