    I never trim the fat from mine.. but I do score it in a diamond pattern.

    I pull the pork with my hands and "squish" some of the fat into the pulled meat to keep it from drying out later.

    I don’t do a lot of trimming but just take some of the big fat pieces away. I’ve never had it dry out on me yet. And I don’t care for the fatty pieces in pulled pork very much in the end product

    Put her on about midnight. Smoker at 220* it’s not 8:14 and she’s sittin at 170*. Perfect timing to wake up. Time to wrap in foil till 190

    I know I know. Pulled pork is the only meat I don’t really like the fat on. Everything else I love it.

    I usually pull a lot of the fat before I pull it. That way I get as much as possible to render into it. I don’t like eating the fat chunks in it either.

    Same crap everyone else got
    First fatty ever. I've been missing out. Soooo simple and using a pellet smoker makes it just that much easier then all my other smokers.

    By the encouragement from another poster on another forum I also started a bottle of pepper sauce this morning

    4 Carolina Reapers
    8 or 10 Poinsettia peppers
    50/50 white/ACV
    6 ounce woozy bottle

    Going to give it about a week to dwell then going to use for dressing up some ham green beans and potato's.

    Finally pulled the pork butt. 14 hours later for a 6.3 pound butt. Going for an hour rest now then Time to feast.

    Meh. I like my pulled pork all soft. Just not a big fan of the bark and toughness.
