    Because of me and a co-worker, the local grocery now stocks tritip.

    I have a pork shoulder in rub tonight. Firing up the pellets tomorrow am.

    Smoking up butt and thighs with pecan and apple. Incase other people have the tip-top tent didn’t know you actually had to clean this thing. Use a degreaser and cleaned out all the moving parts and replaced the rubber gasket.

    Does anyone have suggestions for a way to cut the sweetness in a jerky marinade? I have tried countless recipes and have come to find that I like just using a simple yoshidas based marinade the best, my only gripe is it usually comes out a tad sweet. Is there a simple ingredient that would counteract the sweetness? My initial thought is to maybe try 1/2 yoshidas and 1/2 soy as the base instead of 100% yoshidas.

    Since the first three ingredients are soy sauce, sugar and high fructose corn syrup, I would say cutting it with soy sauce would be the best step.

    Either today or tomorrow I am planning on doing some al pastor tacos. I have a vertical skewer to pile the meat on and I have about a 3 pound boneless butt to slice up. I plan to cook it on the Jim Bowie at around 300-350.

    Does anyone have a tried and true recipe for the marinade? There’s so many on the internet and its pretty hard to decipher which might be best. In all honesty I am leaning towards this recipe from Tasty lol.

    Damnit. Now I am hungry. Guess I will hit the market for achiote paste. And why did I not know al pastor was cooked vertically like shawarma?
