    I also use the spatchcock way to roast a lamb. Same principle - better, more even cooking. The inside of the carcass sees the flames also, not just the outside, so there is more flavor.

    I know that's not turkey, but it is the same cooking method. Back to the turkey topic...

    Yup, never had dry turkey in a bag. Deep frying is great but the hassle of setting it up, lowering it down and making sure you don't burn down your house is always a chore. My turkeys have always been too big for my WSM and trager so I never smoked one. So for me, brining it overnight and using the bag is the best method for me...plus not everyone likes smokey meats incredibly enough.

    I brine and then just do it the pretty standard way in the oven with a foil tent. Take the foil off for the last hour to brown it up. Brining makes it pretty damn hard to dry it out and they come out soooooo tasty.

    Vegetable crisper drawer makes the perfect brine container to not take up the whole fridge.
