A twist on jalapeno poppers...

My 8 yo daughter wanted to make dinner.
Green chili pork enchiladas. They are very good. She is a very picky eater and has been trying everything she makes. Unfortunately she didn't like these.

 

When's the vid?

 

Probably around Christmas... I got sausage and shrimp Monday, then a stripe fishing vid, then a top 3 ground beef, then apple sauce... And then ill have an opening for this I think

I deseeded and cut up a few (maybe 7 or 8) jalapenos and a some cheddar cheese and mixed that into a block of cream cheese. I rolled balls out and placed them in the freezer for about an hour.
The batter is 2/3 cup SR cornmeal 1/3 cup SR flour,
1 tsp salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1/4 crushed red pepper flakes
about 1/2 cup of milk (until it is just thicker than pancake batter)
coat the chilled cream cheese balls and deep fry for about 4 minutes

 

So our oven quit tonight. Had to make baked potatoes in the insta-pot. They were meh. Daughter wanted to make a cake and a light bulb clicked. Out comes the waffle maker.
I frosted and she sprinkled them.

What happened with the oven?

 

Oven and broiler won't heat up. Its clicking like it is, but just dead. Top works fine.

 

Easy to diagnose that if you own a meter. I’m an appliance technician if you need some help. Feel free to PM.

Did my interpretation of 8 billion Beef Bourguignon recipes. Where’s Julia Child?

 

Breakfast this morning. Ham, egg, tomato & cheese sandwiches grilled on the pellet smoker.

 

I didn’t snag a picture but decided to make spaghetti in the instant pot tonight. Came out really well and was super simple. I browned a pound of ground beef in it on sauté then I shut it off and stirred in my spices (basil, oregano, garlic powder, onion powder) add 2 1/4 cups of water and stirred that all up. Took about 1.5 pounds of noodles and broke them in half and put them on top of the other ingredients in an alternating pattern. I then covered it with about 32 ounces of sauce (can make ahead or use jarred). At this point don’t mix. Turn it on high pressure for 7-8 minutes. Once it’s done do a quick release open the lid and stir everything up. Let sit for about 3-4 minutes and stir again. Then serve as normal.

Daughter loved it, was easy and only one pot.
