What setting (notch) would I use to level my 2019 OR with the rear stock suspension? Thanks as I know this is probably covered somewhere

4th or 5th position will get you close, depending on how much sag you already have on your rear leaf springs.

Only you will know. The distance can be measured from the ground to the fender. If the difference is 1.1”, then 3rd notch it is.
If you carry any substantial weight in the bed, you’ll have a bro lean with the rear end sitting lower.

It depends on the weight you’re carrying in or on the bed and your rear leaf sag.
I have sagging/inverted stock rear leaf springs and the weight of a canopy, and the rear still sits slightly higher than the front.

In the pictures, it’s sitting on the overload with only a canopy and no additional weight in the bed.
Dealer was nice enough to replace the factory springs with these updated Tacoma springs as part of a TSB at 3,000 miles. At least the rear-end howling noise is decreased.

    Here’s a 2008 Tacoma with 98,000 miles that I recently sold for my Father-in-law.

It was an extra cab with a canopy and still had good leaf arch, and it wasn’t sitting on the overload springs.BA0AE39F-65BD-441F-AE22-87A12BED3647.jpg
