    Have you ever roasted a bulb of garlic in the smoker? Cut the end off exposing the garlic, pour in a little olive oil, crack some fresh pepper, then smoke for a while (need to look at my notes) wrapped in foil with the top open/exposed. It'll soften the garlic in to almost a paste. Add a wee bit of fresh squeezed lemon for a citric/acidic layer and smear that stuff on damn near anything.

    If I could get that flavor dried up and in to a shaker, we'd be set.

    Yes we love garlic off the cookers like this. Cindy makes a smoked cheesy garlic dip that is great.
    Get ya a cast iron garlic bulb cooker.

    I oven roast garlic like that. Never thought about the smoker have to try that. As for the dried up, try adding it to a food dehydrator and see what you get.

    I'm needing to find the right blend of spices that accurately mimics that flavor.

    Something like lemon pepper, smoked cracked pepper, roasted garlic, and ????. That'd be the Vampire Rub I'd be shooting for.

    I will be doing this soon! I have an old dehydrator. Gonna buy some heads of garlic, then smoke with Pecan? using tube smoker and then dehydrate and try and super finely mince it. I din't want full on powder but more like granulated. guess I'm off to the store tonight!

    I would try some roasted garlic, garlic powder, smoked sea salt (just a little to boost flavor profile), smoked red peppercorn (little citrus type profile).

    Just texted the mrs and we have all parts to our dehydrator so looks like I just need to go to the store and fight the hoards of people now... yuck.

    Just make sure you get good quality stuff to begin with. Also should probably pick up some brisket, butt, ribs, whiskey and tequila while in there. You know just cause you're already there.

    You can buy liquor in the grocery store here (not FL) but there is usually a liquor store close. :)

    Haha I was out and about and then making a mod to the truck and not realizing what I started here...

    The salt/pepper rub on a pork shoulder that's been stuffed with 20/30 whole cloves of garlic and then smoked.. that's stuff dreams are made of.

    Smoking whole heads of garlic with the top cut off is amazing too.. and I think you're into something when dehydrating .. it could work. I've dehydrated a lot of things to make into rubs.
