I hate to be THAT GUY, but this is technically incorrect. Domestic duck requires a couple specific cooking techniques to taste great. Duck breast: cross hatch the skin, then pan sear skin side down. As the duck fat renders, tip the skillet a little so you can spoon the hot fat over the muscle. This method will allow a crispy outer layer and a nice med-rare interior. For the legs and thighs: a similar method to the breast can be used. However, the legs and thighs do better with a Confit method.

While the breast can be eaten like a steak, the legs and thighs are better used as an ingredient in a dish.
