    5pm tonight it will go in a brown sugar, garlic, salt brine.
    6am: butter and seasoning under and on the skin. Stuffing with apples inside.
    7am tomorrow it goes on the GMG pellet smoker at 150 for two hours then 275 until it’s done.

    Every smoker cooks differently. Outside temperature plays a big role. I like to smoke it at 150 for a few hours, insert a thermometer and crank it up to 275. I can lower the temp or raise it depending on what time I want to eat.

    Alright pellet smoker folks.

    Did a practice bird Sunday, and the recipe is good. Doing two birds of the same size, 11lbs, for tomorrow.

    Will I need to adjust my cook time much, or is 250 degrees, 250 degrees regardless of numbers of bird in the chamber?
