...often served next to a platter of boudin, black eyed peas, and some chips and nacho cheese dip from the barracks rat at the platoon pot-luck.

Spatchcocked, R,W,B pepper and garlic salt, injected with Tony Chachere’s Creole garlic butter. Smoked at 325° for around three hours, pulled at 166° in the thickest part of the breast. I let it sit seasoned and uncovered overnight in the fridge.

To all my Green mountain pellet guys... I’m looking to add some more cooking surface to my Daniel Boone... What are you guys using for racks or shelves?? Please don't say get a bigger smoker because that isn’t happening! I’m in the middle of some tough life shit and cant buy pricey stuff.
I got a bunch of people asking for cheese and I wanna cook more so I don't have to do two batches... I alway wanna smoke more meat for parties and stuff as well.

They sell a shelf to put inside the Daniel Boone for added space. Check a local dealer or go online and get the measurements of it and find a generic shelf.

I just bought the Jim Bowie and will be getting a shelf as well.

I got a small rack from Amazon a couple years ago. IIRC there was a lot of different sizes.

I have the 6 qt. IP and before there was a WiFi option. No idea on earth why you would use WiFi for an IP. Or oven for that matter. Unless it was an Easy Bake Smoker Oven. And I use a Thermoworks Smoke for my kettles when I smoke or the built in WiFi on my ATC.

There is a bit of a learning curve with the IP but they do some make some really decent shit LOL. They aren't really instant you have to still come up to temp, natural pressure release, etc. You'll figure it out. It is that time of year I will be using mine more.

Can also use it as a slow cooker. Almost time to use mine for tater tot casserole for the annual work Christmas pot luck.

You can use it as one pot for cooking an entire meal.

Gun Club (first time I had this was at a gun club I shoot at) roast beast with coke. First take a roast and sear it on the grill, or frying pan with bacon grease.

    4 lb. roast
    Carrots
    Clove garlic
    Small potatoes
    quarter-half cup water
    Package french onion soup mix
    Package brown gravy mix
    Can cream of mushroom soup
    Bottle of coke
    1 onion cut up

Cut up onion and put in bottom of pot. Put the roast on top and then minced garlic on it.

Stirred up gravy mix, french onion soup mix, mushroom soup (with roasted garlic) coke and water. I went too light on the water at first and got my first BURN error message on the IP. Added another quarter cup and it went away.

Pour mix over roast and 35 min. HP. Let natural pressure release for 10 min. then full and added potatoes and carrots. Went another 30 min. HP and natural release for 15 min. Gravy was a little thin because of the water so turned IP to saute for about 5 min. and added 3 Tblspoons corn starch paste to thicken.

I almost never use my All-Clad stock pot anymore and use the IP instead.

Got a left over ham bone and ham that you smoked?

Make some awesome ham and bean soup. Smokey ham bone broth and smokey ham is a good thing.

    You'll figure it out

The wifi on an IP may have been meant for a certain forum member that doesn't have wifi on his pellet pooper. ;)

What temp were you cooking the steaks at and how long did they cook for? I haven't cooked a steak on my pellet smoker, yet.
