    Coat that CI skillet with bacon grease, put in the oven til hot, pour in mix, bake. Result, crispy crust.:drool:

    I do Spicy PF on my wings with the vortex every single time, never a burnt sugar taste but they get an amazing caramelized coating.

    Actually just did some Saturday along with lemon pepper (forgot to take pics).

    Slightly better picture of the finished product. It doesn’t seem like much but there’s generally only around 10-12 people at our work parties and there’s always waaaay too much food.

    Whatever is on sale. Last batch I made was a top sirloin roast at $5/pound. I've done London Broil (usually $2/#), petite sirloin steaks ($3/#) and other roasts as my local butcher shop has them on sale. :cheers:

    My suggestion would be wet brine and smoking the breast. Liquid could be an alcohol if you are into that. Or ditto the whole bird if you want skin and a tad less flavor and smoke in the breast meat.
