Supposedly, Traeger uses flavored oil in their pellets, not real fruit wood. I have no idea if it's true.

Correct spelling wrong dish. Birria is basically a more stewy version of barbacoa. What we did was a cabrito asado. Literally roasted baby goat. I kinda jacked it up tho.

Woke up to these guys this morning, wrapped and resting nicely in cooler will pull in a couple of hours. Even though there were similar in weight, finished one and a half hours apart.E5935B18-F117-47BC-B5D5-2A463C84FD42.jpg

Just got to my first beer of the day. Here’s a shot of my brothers “portable” keg cooler, even has its own baby C02 bottle.191F0E6E-65C1-424B-8539-82EC90C80387.jpg

Yes, he kegs in old soda kegs. He does pre-chill the beer in his keezer. It’s over 2 inches of ice all the way around the keg.

He built his test model originally with a cheap Walmart cooler for tailgating. Then he went a bought a better Igloo water cooler for the orange one.

    Birria just means stewed meat.

This would be birria de chivo (goat) if so prepared.

Oh boye! Im wanting some rn, especially with the salsa I made. 85% chile de monte, 2% garlic, 1% salt, and then the rest is half lime half extra virgin olive oil.

Lord yes, but don’t ask him about it or he’ll be talking about it the rest of the day. He even grows his own yeast. I’ve posted his keezer and kegorator before. Combined he can (and does) have ten taps running.

No not necessary, I feel it makes for a more tender ham though. And deeper flavor.

I am no pro on pellets, up until the Pit Boss just used them in smoking tubes on the gasser. Did a lot of research this summer and picked up a bag of Lumberjack competition pellets, they seemed to be the crowd favorite on most sites. I am happy with them. Going to need some more soon and see Lowes sells them. But cheapest is where I got them the first time at Runnings in Austin, Mn. they were also $8 a bag there.

Just finished another cook on the pellet pooper. Really am sold on this little thing, it was almost too easy.

    3rd cook seafood.jpg

Crab and cheese stuffed Portabella's. Marinated Salmon on Cedar plank. 2 lbs. shrimp marinated in avocado oil, garlic, lemon juice and fresh cut basil and thyme on cedar. That was a great meal and turned out perfect.

Have several pounds of wings to do on the kettle today yet. But not right now.

I think if you’ve smoked before and built good habits with that then the pooper is dead simple because you already have the bad habits out of the way. If it’s the first you’ve smoked then it’s still highly possible things aren’t going to come out great.

Full trd pro suspension. Toytec progressive add-a-leaf pack (with overload in). Sema trd 4runner rims. 285 70 17 ridge grapplers. Satoshi grill.
I personally like pit boss pellets. I like the competition blend and the fruit blend. Used lumberjack competition pellets a few times, comparable taste to pit boss but they seem burn quicker than pit boss ones.

Too late now lol. I just let it smoke at 150f, then bumped to 225f. My basting stuff was kinda thin, so basting every 15m. Taking longer than I thought, IT at 110f, and I need a nap. :)

I'll know soon enough! Picked up a bag of Pit Boss apple pellets at Lowe's when I purchased the pit boss. I normally use apple wood with my WSM and kettles when smoking, not sure how much difference the pellets will be yet.
