    Man I would buy some of them venison and elk ones. Sounds like an excellent event to be part of. When she was still ali e my grandma and I would bake dozens and dozens of cookies for the holidays. We would also cook all the meals. No one ever left our house hungry after our holiday meals. Makes some excellent memories.

    I recently sold a propane smoker to a guy who lived in south lake Tahoe. He bought it because charcoal is a no no.

    Here is the only pic of the fatties that I got. The bleu cheese one was THE BOMB. The only downside is that the cheese got so melty that when I sliced it, it started oozing out. None leaked during the cook, so all of the cheese was available to serve. I would tilt them up after each cut and it would pool in the bottom of it until I laid it down to cut another slice, hence the slightly cavernous pictures. Everyone got PLENTY of cheese with their serving, though. Even the ones without bleu cheese melted quite a bit - first time I've had that.

    The look on the cutting board was fantastic.

    That is glorious. Every time I see something about a fatty, I make a mental note to make one. This has etched it in my brain to make one when I get back to NC after the holidays.

    Do it! The basics are just ground meat stuffed with cheese, rolled in to a sealed log, then wrapped in bacon. The type of meat, what you stuff it with, how you season it, etc. is all up to you. They are fun to experiment with whatever you come up with.

    @Bigdaddy4760 can help you with the bacon weave. :anonymous: :rofl:

    Congrats! I'm a bit envious. I'll have a celebratory pour of something in recognition of it. Good luck in the next chapter!

    I made some tiny party fatties once ... One of the flavors was buffalo chicken with Bleu Cheese and I do recall that being messy too! Totally delicious tho!

    You know, I've never considered that. I've made armadillo eggs, but never bit-size fatties. I like that idea!

    I've drank a lot more for stuff that is a lot less significant. :rofl:

    They were about 3 bite appetizers if you follow what I did with them... I'm sure you could do something fancier with the bacon... Would impress the crowds at a competition!
