Rolled out some more tonight for my family's Christmas tomorrow. I made em a touch smaller so they are more bite size and I out in a few more peppers and probably 2x as much cheddar because let's be honest, the cream cheese is the weak link in this recipe so if you add more of everything else it has to be better right? They are almost like hot pimento cheese balls now. Also the jalapenos have turned to a lovely red now...

I’ve never made a Napoleon but I make my own vanilla all the time.

Last batch I made was Madagascar Bourbon Beans and Cruzan Rum. I did a big bottle so I used about 6 beans split and scraped in the bottle. I age it a minimum of 8-12 weeks before it gets used. Needs to be tipped back and forth a few times once a week.

Once I started doing it about 3-4 years ago I can’t go back to the store bought anymore.

Well that parts debatable because I try to use good beans and liquor.

In general yes I agree because I get a LOT more out of a bottle. I’m thinking about doing a mixed bean batch soon so I can get more complex flavors from it.

It is unless you’re buying the cheap stuff from like Walmart or dollar general.

I tend to like it better homemade than even the high end brands. So much more flavor and complexity. Speaking of which I need to order some beans and get a new batch going soon. Need to get some new bottles also.

Last year I made up a bunch of bottles and gave them out as part of Christmas presents for people I actually like.

    Best of the Bean
"For smooth, pure-tasting vanilla extract, make your own...If you want to fill several bottles, it's worth buying the pods in bulk. Beanilla.com charges $13 for 10 (Madagascar variety); the site also sells glass jars"
