mats, flaps, and stickers. Extang solid fold 2.0. Mobtown sliders and full skids. AVS vents
It’s worked well for me, with no noticeable difference in taste, etc.

Pretty much covered above but my method, which takes much longer

    180 for 3 hours
    Bump to 225 til done.
Sometimes I'll ramp up to 250-265 if time is short
I try to go no wrap if time allows
Fat down over the heat source
Cook til probe tender, I start checking at 195 but 203-207 seems to be common temps

Rest is vital. Let it breathe for at least 10 mins to subside cooking process, wrap in foil a couple times then towels then in cooler. Longer is better.

Don't forget to drink beer and take pics

I haven’t wrapped mine in a long time. I don’t bump at all unless it’s in a huge stall and I’m running out of time.

As you said cooler time is the key.

well.... no WiFi for this cook. Apparently when I connected the DC to the app, I had to leave the server mode, and that somehow dropped the connection entirely from my DB. Already started the start up process so no going back now to reset the control panel/WiFi so it disconnects from the server and just uses regular wifi. Also, don’t know how to do that without looking up instructions. Gonna be cookin like @Misplaced Nebraskan so maybe that means my brisket will turn out extra good today

If you have any international or Asian markets where you live, there are many ramen options much tastier than Maruchen.

Bought all the stuff to do that last week, then got busy and never made them. If the jalapenos are not too mushy tomorrow I might do it since I will be off work.

Shoulder went on at 8, ribs just went on a few minutes ago. WSM wants to run high today for some reason, i have two vents closed, and the third is all but closed at 1/16 open.

Damn that looks great Dan! How long do you get before having to load the hopper? Only concern I have is how fast mine eats pellets, 2 hours mine is pretty close to empty. Really like the idea of being able to fill the hopper and go to bed. But the cold has something to do with consumption despite the insulation I did.

    PelletSnow.jpg

Been using the hell out of it as both a grill and smoker, need to clear off the deck but have to do the driveway first. They are calling for 4-8" more Thursday-Friday. I'm on my second bag of pellets now.

Hopefully @Bigdaddy4760 will start building and selling a pellet hopper extension for us, I'm in if he does!

So it was in the 40s and a little windy through the early morning. I set an alarm for every 2 hours to check the hopper. You are correct she eats pellets like it is candy. Looking at your conditions you are probably using more than me, but I am game for buying an extension for the hopper as well. This 15lb packer sure takes almost all the room inside as well. But about every 2 hours I am loading pellets and can see the auger. I might look into insulation blanket and some gasket for the lid and see if that helps.
