    went glaze-less on the pork belly tonight... still so damn good! The braid is awesome and due to all the intertwining, was super tender and moist in the middle. Love it!

    I'd have to try and make a small one to see how many skewers it might take, then to get the Misplaced Nebraskan size would be expensive I'd think...just depends

    My first smoker was a little chief smoker in the late 70's, made by luhr jensen. Smoked a metric shit ton of salmon in that thing in Washington State. Salmon I caught, all of them on a #8 fly rod including a 44 lb. King. Puget Sound region doesn't get that cold upper 20's lower 30's at the worst. Wind will kill it though, learned to put up wind blocks pretty fast.

    Wait, wind chill doesn't effect inanimate objects?! Sure, you betcha. Park your truck radiator facing into the wind when it is thirties below zero with 60-70 below wind chill because they have cut the corn between here and the Rockies. Ain't nothing to stop the wind then. Let me know how well that works out for ya :thumbsup: Yep you got it...

    The welding felt I have attached helps with both. But just tried using the Smoke setting and dropping the P setting to 3 then 2. Too cold, fires went out twice. Opened lid and did a purge just like a boiler and restarted it. Gave up and am running at 200° now. Not nuclear science hell it is only rocket science anyone can do it :D @Misplaced Nebraskan

    But trying to get as much smoke on my Sicilian spicy meatballs and little smokies as I can. One with onions form my cook the other day and the other with red and green peppers cut up with them. BBQ sauce going on toward the end.
