    No cinnamon rolls in the house. But I did have a few glazed chocolate doughnut holes after. Couple of hours later had a spicy chili and chocolate burp that was actually pretty damn tasty :anonymous: Think I know how someone figured out chili and chocolate works well together..

    So after I wrapped the ribs I didn't go back outside for an hour and a half. Pit temp was 40° and firebox overflowing with pellets, no fire. Only took about 10 minutes to clean it out and get it back up to 300° but not sure where the meat is now. Guess I should start using the thermoworks smoke and setting a pit temp alarm. Just to be safe. Going to be a late supper now but seems like that happens more times than not around here. Will let them go for at least an hour then unwrap and go from there.

    A good chocolate bar in a Chili adds a nice depth of flavor and almost a creaminess to it. I’ve been adding it to me chili for many years.

    When I make a good sized pan of it I use high quality milk chocolate and I use 8oz to 12oz.

    The wellington turned out fantastic. I served it over some parsnip puree with asparagus and a little reduction. Made for a happy mom on her birthday. She also busted out a cabernet from 2005 that paired really well with it. I think I drank 3/4 of the bottle :anonymous:

    I’ve got a pork loin getting ready to go on that I rubbed with a 2:1 ratio of regular Meat Massage and On Point. This will be sliced up for lunches this week. If I can keep out of it lol

    1.5 hours later she’s done. I think for pork, mixing original meat massage and on point is a winning combo! This thing is very tasty!
