Garlic Parmesan stuffed pork loin chops along with some parmesan mashed potatoes!

Loin chops were stuffed with cream cheese, bacon, chives, garlic powder then floured, egg and Panko Bread crumbed and air fried @ 360F for 24 minutes.

Basic mashed potatoes with some parmesan cheese and my homemade ranch dip seasoning mixed in.

Albondigas. Like meatball soup. Taters, carrots, chayote. Chayote is like a tough squash. Little bit of Mexican rice on the side.
Like Mexican soup for the soul. Ha.

Bought an air fryer on Black Friday and finally using it now. Holy balls, it works great! Best fries I’ve ever made at home.

I didn’t want it. Wife bought it. She tried using it, gave up, and now I’m the air fryer guy.

The pressure cooker went the same way. She gets it out and does a lot of the prep, then leaves it to me to cook with it.

I have literally come home and had all of the ingredients for split pea soup all laid out so that all I had to do was fire up the pressure cooker.

She’s the same way with the grill. When she wants burgers, steaks, or brats - the meat is resting and waiting on me.

What’s the recipe? Trying to eat a little better and I’m not a cauliflower person.
