    So is there really no benefit to keeping the PSI high for the first 72 hours before pouring?

    Oh no, there definitely is. I initially set the pressure to 30 psi and hold it there for a day or two then drop it to about 12. Since I backfill the fermenter with CO2 when I cold crash, the beer will absorb some of the gas and start to carbonate, so by the time I keg it it's already cold and slightly carbonated. Within about 24 hours of kegging it already has some halfway decent carbonation goin' on. This one was cold crashed for the better part of a week taking in CO2 the whole time (albeit at very low pressure), so it carbed up pretty quickly once it was in the keg.
