Good to know that works. I actually told @Twizted next time I make it that I needed to try poaching the eggs separately. I still wish I could perfect the steam method. It's either undercooked white or overcooked yolk. Maybe I could hold the yolks separately for a min? Such a pain. Meh.

Really, it's about heat control. Whites and yolks coagulate at different temperatures. If you could get it to hold between 150° and 155° you could use the steaming meathod.
