Best sweep the house first lookin’ for active smoke alarms. Did Chicago Steaks a few years back. You know, with two cast iron preheated pans. Fire guys reported back to the neighbour that called them that they looked really good. #rangehoodrocks

I don't really have pics of the food, but thought you all might get a kick out of this. My local liquor store hosted a tasting event with Sagamore Spirit last night and I had been asked to provide BBQ samples to all of the guests. All-in-all, about 40 people showed up. I served pork belly burnt ends, brisket, and beans. The PBBEs are always a hit. The brisket turned out quite good, too - very tender. I had a handful of folks come back up for seconds and chatted with a number of others as well. Not a big event and I did it for cost of meat so that I could get the exposure (sold a little rub, too), but it was fun being out in the public space.

I didn't have a whole lot of room to work with, but managed to get it to fit on top of two bourbon barrels :D.

Dude that's awesome! I'll be down in Houston for a couple of weeks starting at the end of next month. Load up the Taco and take a road trip! Expand your market influence! We'll just show up at HEB and set up shop. What are the chances they'll stop you?

Warming up here into the 20's during the day so ice all over the deck. Sometimes I don't mind ice skating, it can be worth it.

I almost fired up some charcoal tonight. Not sure why I even considered it I am really liking this pit boss. A lot.

Don't think I ever was a nay sayer on the pellet poppers, or any other method of smoking and cooking. Now that I own one though and on my third bag of pellets in about a month... :p

The ability to sear directly over the firepot is huge for steaks. Heat shield however makes it more like a grill than an indirect heat smoker. Good and bad points for both. They all have their merits

Smoke however is weak. Why so many use a secondary smoke tube especially for shorter cooks, I get that now. Once it warms up will play with the smoke setting where you cook at low temp for more smoke generation before actually starting to cook.

Not that I am knocking pellet poopers at all. In fact waiting for reviews to come out for the Lockhart

    Yeah baby :D

Webbed feet. They can be difficult to cook but done right are damn fine fare. Normally do in the oven under the broiler and it is a fine line. Very fine line but can be awesome.
