    we made a chicken fried cauliflower rice a few weeks back, it was actually decent, it was something I would make again.

    A bit soy sauce and a dash of sriracha covered the cauliflower taste up

    It’s all good man. I eat what I like still. I try to eat less of it and less often. I’m going to start riding the bike again when the weather isn’t crap. Got a new one and all. I want to work out like I did when I was younger but my body (back and shoulder) can’t do that anymore so I need to come up with a new workout. I used to use the treadmill a lot but sold that when we moved, need to get a new one once money is better again. :)

    I played football and hockey at 215 in HS so I’m never going to be a small person by ANY means. :)

    I want to get back to 250ish though and am just trying to be a little healthier, want to be around to see my little one go off to college and get married but I will NEVER be one of those people who only eat macro this or that. I like food and I’m always going to enjoy it till the day I’m no longer around to.

    It’s all about balance. I had a salad with leftover pulled pork for lunch balanced out with a heaping portion of leftover Mac n cheese with pulled pork.

    Brussels I can do if they are cooked in olive oil and basalmic vinegar but beets and radishes can go in the trash. Reminds me of a coworker that was a vegetarian who wrecked one of the bathrooms one day and blamed it on eating beets for lunch. o_O

    Yea, I don't pretend. It is what it is. If I call it a substitute though and can deal with it then it's guuud. I stopped drinking whole milk so long ago that now it tastes like heavy cream to me and is gross.

    That's how we intend to swap out our starches. Something has to give, and I'm tired of buying belts.

    Deb recently found out that real parmesan cheese is good for you. Helps you to fall asleep amongst other things. I plan on making crisps to replace croutons in our salads.

    I saw a co-worker two weeks ago and didn't recognise him. He had the surgery and in less than a year lost 100 lbs. No longer takes cholesterol meds, and he basically eats anything he wants. He just can't eat a lot of it. And that's what I'm trying to do. Cut back as much as possible. Some things it's easy, some things not so easy. I'm a foodie, and a great, and an adult so I can make anything I want, make it taste good and eat as much as possible.

    We're not taking pictures yet Will, soon though. :D

    :fistbump: Sounds like some of my meal plans I've tried.

    Try the brussels roasted in a hot pan with some coconut oil and a bunch of the Unicorn Dust, or any of the Pitfaced rubs. It's the only way we eat them now. Add some bacon too.

    Have you tried pickled beets? Or those "Love" beets? I really like pickled beets with hard boiled eggs or in a salad with contrasting flavors like pear, or orange, or apple, and a strong cheese.

    I have not tried these yet but a friend has made them and said they were great.
