    It’s really remarkable how real bread gets people going!!
    Bread should have 3 ingredients: flour, water, salt. Commercial breads have up to 31 ingredients. They bleach flours to make them pretty but then “fortify “ it to put back the stuff they removed by bleaching and charge more. My niece has a gluten tolerance problem but guess what? She can eat as much of my bread as she can stuff in her mouth. The fermentation process breaks down all the glutens into easily digestible products. Good things take time.

    When we lived in Long Beach in the early 70’s we would drive to SF regularly. Dad would fill the trunk of that old Catalina up all the way with bread. Bought a dedicated deep freezer!

    His son hadn’t realized his awesome potential back then. In fact, I was a little shit. Everyone left their garage doors open back then and I had a real thing for lawnmowers. Pops would come home and find 2-3 extra mowers in the garage weekly. Had to go knock on doors to determine the crime scene...
