Rather than trim them and have tiny end pieces.. cut them in half so they cook more evenly and will get done at the same time.
You can stand them on their side if you want.. do what works best for you and your smoker

All looks good. I just threw on a couple of thick cut chops on the charcoal chimney, spot on.. three minutes per side...

Doing a smoke tomorrow, not even certain what all I’ll throw on.

Also look up rolling ribs. I did that for awhile too.

    It all works. Heat+meat=food.

It’s a Weber rack. I think Orchard supply before they went out of business. I’m pretty sure Lowe’s carries them.

I’ve also cut the ribs and that totally works too.

If you’ve made a hamburger patty you can make a fatty. Don’t put too much though into it! I think I need to do another one...

Any secrets to getting the ground meat in such an even square? Rolling pin and cut into square?

Maybe put a layer of plastic roll flat and peel it off, square the edges

Put it in a one gallon zip lock bag, roll and then slit the seams, perfect size.

Solid is an understatement, Outstanding job!

Weber makes at least 2 rib racks. The 6469 rib and roast rack is just a little too large for an 18". But by removing one end of it it will fit on an 18" I should just take the other side off too

    rack.jpg

The right one (IMO) is what nDub has the 6605 rack. Makes life a whole lot easier, he is a smart man.

I've been up for a couple hours trying to get the motivation to get started also. More coffee... And want to wait for the morning pills to kick in before I shovel snow but at this point just an excuse. Couple more hours get a break in the snow finally. The table was bare when I went to bed last night.

But it is a dry heat snow :p

It's like 70 here right now :bananadead: I feel a little guilty lol. But it is raining on and off, so at least I have that to deal with. Gonna have to put the canopy up.

Also someone got into the bed of my truck and took my compressor and a couple hoses (work stuff). That's one lucky MFer, I hope he appreciates that.

Thanks! Like the others said. One gallon zip lock. I use my fingers to get it mostly even and then go over it with a rolling pin. For the bacon weave, that's just freehand. Practice makes perfect, so eat more bacon! :D
