    LOL! Far from the best. West Coast has good stuff as well, probably better than what we have out here. But don't think I really have a favorite... I like a lot of the stuff from Tree House, and from this place (Nod Hill).

    With 5 weeks in secondary, I think I would have re-yeasted at bottling, just to be safe. Get yourself some T-58. That strain is a beast and from what I understand is commonly used by some commercial breweries to bottle condition high ABV Belgians.

    I know there’s some debate on the subject, but this is why I choose to bottle condition beers. By bottling soon after fermentation is complete, that eliminates the extra step of adding bottling yeast.

    I’m doing the Candi Syrup Westvleteren 12 clone soon and I plan to let it condition in the bottle for no less than 6 months. Hopefully I can make most of them last closer to a year.

    My dark lager has finally hit its stride. Next brew day will probably be a pale lager done with Carolina grown malt and Crystal hops. Looking forward to that one.
